Go Feasting during Bhogali Bihu/Bhuj

One of the most loved festivals of Assam is the Magh/Bhogali Bihu celebrated during January second week of each year. Being a harvest festival this marks the end of winter harvesting and during this time people have fun and make merry by conduction Bhuj (feast) either with family or in groups. This festival is similar to Sankranti/Lohri/Pongal which is celebrated all over India. So, in case you are in Assam during this period then do try to attend a Bhuj and indulge in a variety of food from bamboo rice to different types of pithas and other vegetarian and non-vegetarian delicacies. People also make makeshift huts or “Meji” from Bamboo leaves and thatch, where they prepare their food and then burn it the next morning which then marks the beginning of the month Magh. The entire night is spent around a bonfire singing songs, beating dhol and making merry. One of the main highlight of this day is boys going out at night stealing vegetables and bamboos from the neighborhood farm. Hence people wake up all night lighting a bonfire guarding their small vegetable farm and bamboo fencing. But then again this is just an excuse for a night-out with the near and dear ones, cooking, eating, and dancing all night. Buffalo fighting is another major highlight of this festival.

If you are in a mood for some adventure then you must visit Nameri National Park situated in the Sonitpur district of Assam. Apart from watching some exotic wild animals you can indulge in water sports at the Jia Bhorali river flowing through the park. Jia Bhorali, the tributary of one of the massive and untamed rivers in the country, the mighty Brahmaputra offers a thrilling and action packed rafting experience. It originates at Tuting and concludes at 180 kms at a place called Pasighat. It takes almost a week to cover the entire stretch where rafters also camps at the end of each day along the river.

Sivasagar, the literal meaning being “the ocean of Lord Shiva” tells the tale of one of the most powerful empire in India – the mighty Ahoms who ruled Assam for more than six hundred years. Brahmaputra Beach Festival

This festival is celebrated along the banks of the river Brahmaputra Bharalumukh in Guwahati mainly to celebrate the onset of Magh Bihu. People come here in large number to be a part of the festival. The entire stretch of the river Brahmaputra there starts bustling with endless numbers of shops selling hand made products, people participating in various sports such as parasailing, kayaking, canoeing, dirt biking, enjoying traditional games such as cock fight and egg breaking etc. One of the main attractions of the festival is the boat race.

The barter system fair, where goods are exchanged for goods is one of the rarest of the festivals in Assam held every year in Morigaon distict. Tribes such as Khasi, Karbi,Tiwa, Jayantia all come here along with their products and interchange them with the local people as per their needs. This 3 day long festival has many other attractions as well.

Dehing Patkai Festival

Named after the huge Patkai range and the enchanting Dihing river, this festival is held annually at Lekhapani in Assam in the month of January. The reason for celebrating this festival is to expose the beauty of the place which is done in the form of organizing wild safaris, trips to tea gardens, though golfing, trip to World War II cemeteries and also an Elephant safari to the Stillwell road which once led to the majestic land of Myanmar.

1 cup skim milk

1⁄2 tablespoon honey

1 teaspoon vanilla extract

DIRECTIONS

Get out a mug of your choice, and put honey, vanilla extract, and cinnamon in the bottom. Set aside. In a separate mug, warm up milk for 2 minutes or until hot in the microwave. Pour hot milk over honey and spices, stir until dissolved. Taste to make sure it is sweet enough, if not add in more honey. Microwave for one more minute, or until the desired temperature is reached.

Golden Milk

This milk comes with the goodness of peppercorns, turmeric, and ginger; all of them capable enough to keep you protected from a common cold, sore throats, headache, congestion which is common during monsoons. 

Recipe:

Ingredients:

2 cups of milk (or substitute coconut milk) 

1 teaspoon dried turmeric (or one-half inch fresh turmeric thinly sliced or diced) 

1 teaspoon dried ginger

A sprinkle of black pepper

Honey to taste

Direction:

Place milk in a saucepan over medium heat. Add turmeric, ginger, and pepper. Stir well if you are using the dried spices. Let the milk begin to simmer — small bubbles will form on the sides of the saucepan. Stir. Allow heating for another minute or two being careful not to let the milk overheat. Continue to stir at this point to get better heat distribution and so that you don’t end up distracted in your kitchen and end up with boiled turmeric in your burner pans. Turn off heat, cover, and allow the mixture to sit for ten minutes or so to improve the infusion. Strain the milk through a strainer if you have used fresh ingredients. Serve warm.

Kesar Milk

Kesar milk is healthy and delicious and when combined with almonds it becomes all the more desirable and nobody can say no to this for sure. Pleasing to the eye and palate, this healthy drink can be served to both young and old. 

Recipe: 

Ingredients

1/4 tsp saffron (Kesar) strands

1 tbsp warm low-fat milk (99.7% fat-free)

1 cup low-fat milk (99.7% fat-free), boiled and cooled slightly

1 tbsp sugar

1 tbsp finely chopped almonds (badam)

2 tsp finely chopped pistachios

1/2 tsp cardamom (elaichi) powder

Direction:

Combine the saffron and the warm milk in a bowl and mix well. Keep aside. Combine the milk, saffron-milk mixture, sugar, almonds, pistachios and cardamom powder in a mixer and blend till smooth. Pour equal quantities of the milk into 2 small glasses and serve immediately.

Ingredients:

1 cup milk

2 small pieces of cinnamon bark

Granulated sugar (or vanilla-flavored sugar)

Grounded cinnamon, for garnish

Direction:

Place the milk and cinnamon bark in a small saucepan and heat almost to scalding; little bubbles should just begin forming around the perimeter. Remove the cinnamon bark and any skin that has formed on the surface of the milk. Stir in sugar to taste. If desired, use a whisk to lightly froth the surface of the milk. You can do this by quickly pivoting the whisk handle in a back-and-forth motion between your palms. Pour the milk into a cup or mug and garnish with the froth and a little ground cinnamon. Serve immediately.

Ingredients

¼ cup/ 28g organic cashews (soaked 8 hours or overnight in the fridge in water)

½ cup / 40g unsweetened shredded coconut

1 large soft Medjool date (pit removed)

1-inch piece of fresh ginger, peeled and grated

1 tsp. good quality cinnamon

1 tsp. vanilla extract or half a vanilla bean scraped

2 cups/ 480ml hot water (not boiling)

1 oz. dark rum (optional)

Grated nutmeg or more cinnamon, to garnish

Direction: 

Rinse the cashews and add to blender along with unsweetened shredded coconut, Medjool date, ginger, cinnamon, and hot water. Blend in a high-speed blender for about 2 minutes, until frothy and steaming. Strain through a fine-mesh sieve into a large bowl and press on the solids to extract as much milk as possible. Stir in rum if using, then pour into mugs and garnish with nutmeg or cinnamon if desired.

Ginger Milk

Ingredients

2 tbsp grated ginger 

4 cups of milk

4 tsp sugar

3 to 4 mint leaves (pudina) for the garnish

Direction:

Combine the ginger and 3 cups of water in a pan and bring to boil. Lower the flame and simmer for 10-15 minutes until a hot yellow liquid is formed. Strain and keep aside. Boil the milk in a pan. Remove from the flame, add the strained liquid and sugar and mix well. Serve hot garnished with mint leaves.

Kashaya

This traditional sweet and spicy herbal drink is a must-have during monsoons. This not only strengthens the immune system but also wards off all the common monsoon ailments away. 

Ingredients: (For Kashaya Powder)

1 cup Dhania/Coriander Seeds

1/3 cup Jeera/Cumin Seeds

¼ cup Saunf/Fennel Seeds

1-2 heaped tbsp Black Pepper Corns (Adjust as per taste)

1-2 cm Dry Ginger (Optional)

Ingredients: (For Kashaya Drink for one)

1 heaped tsp Kashaya Powder

¼ cup Milk (Add more or less based on your preference) 

1 cup Water

½-1 tbsp Jaggery/Brown Sugar/White Sugar (Adjust as per taste)

A pinch of Cardamom or Turmeric Powder (Optional)

Direction: 

To Prepare Kashaya Powder:

Dry roast coriander seeds, cumin seeds, fennel seeds, and peppercorns separately for a 1-1½ minute on a low flame till the heady aroma of roasted spices fills your home! Make sure that you don’t overdo it and burn the spices. The coriander seeds will take about 1½ minutes while the fennel and cumin seeds will not take more than 1¼ minutes for roasting.

Spread the roasted spices on a wide plate and let them cool down completely. This is an important step, make sure that you cool the roasted spices to room temperature.

Grind all these roasted spices along with dry ginger root if using to a medium-fine powder.

Store this aromatic Kashaya Powder in an airtight jar. It stays fresh at room for about a month and a half. You can pop in a fridge and it will stay fresh for around 2 and a half months.

To Prepare Kashaya Drink:

Take 1 cup of water in a saucepan and bring it to boil. Once the water comes to boil, mix in 1 heaped tsp of Kashaya Powder and jaggery or white/brown sugar to taste.

Let it boil for half a minute and mix in ¼ cup of milk along with cardamom/cinnamon/turmeric powder if using. Switch off the flame and let it rest for 1 minute for the flavors to infuse.

Strain the Kashaya through a fine sieve and drink it while hot.

Hot Chocolate

This is everybody’s favorite and just can’t go wrong. A cup of hot chocolate and a book in hand, imagine sitting by the window and enjoying the rain, pure bliss isn’t it? This easy to make recipe is a hit during monsoon and you got to try it for sure in case you still haven’t. And by the way cocoa has got health benefits as well so you better try it this season. 

Recipe: 

Ingredients

Miniature marshmallows or sweetened whipped cream (optional)

1/2 cup sugar

1/4 cup HERSHEY’S Cocoa

Dash salt

3/4 teaspoon vanilla extract

4 cups (1 qt.) milk

1/3 cup hot water

Direction:

1. Stir together sugar, cocoa, and salt in a medium saucepan; stir in water. Cook over medium heat, stirring constantly until mixture comes to a boil. Boil and stir 2 minutes. Add milk; stirring constantly, heat to serving temperature. Do Not Boil.

2. Remove from heat; add vanilla. Beat with rotary beater or whisk until foamy. Serve topped with marshmallows or whipped cream, if desired. 

VARIATIONS: Add one of the following with the vanilla extract:

SPICED COCOA: 1/8 teaspoon ground cinnamon and 1/8 teaspoon ground nutmeg. Serve with a cinnamon stick, if desired.

MINT COCOA: 1/2 teaspoon mint extract OR 3 tablespoons crushed hard peppermint candy Serve with peppermint candy stick if desired.

CITRUS COCOA: 1/2 teaspoon orange extract OR 2 to 3 tablespoons orange liqueur.

SWISS MOCHA: 2 to 2-1/2 teaspoons powdered instant coffee.

COCOA AU LAIT: Omit marshmallows or whipped cream. Spoon 2 tablespoons softened vanilla ice cream on top of each cup of cocoa at serving time.

SLIM-TRIM COCOA: Omit sugar. Combine cocoa, salt, and water; substitute nonfat milk. Proceed as above. With vanilla, stir in sugar substitute with sweetening equivalence of 1/2 cup sugar.

CANADIAN COCOA: 1/2 teaspoon maple extract.

MICROWAVE SINGLE SERVING: Combine 1 heaping teaspoon HERSHEY’S Cocoa, 2 heaping teaspoons sugar and dash salt in microwave-safe cup or mug. Add 2 teaspoons cold milk; stir until smooth. Fill a cup with milk. Microwave at HIGH (100%) 1 to 1-1/2 minutes or until hot. Stir to blend; serve.

Masala Milk

In case you want your steamy glass packed with all the goodness of health then this can be the best milk recipe for you. With dry fruits, fragrant spices like nutmeg, pepper, turmeric, saffron, and fennel seeds, this glass of milk will help you relax. Good for both the young ones and grownups, you can prepare the masala mix and store it in an airtight container and use whenever you want. 

Ingredients (measuring cup used, 1 cup = 250 ml)

½ cup almonds/badam

½ cup Cashews/Kaju

½ cup Pistachios/Pista (shells removed)

20 green cardamoms/hari elaichi/choti elaichi, only seeds, and the husks removed

Half nutmeg/jaiphal, grated or powdered or 3.5 tsp nutmeg powder

½ to 1 tbsp dry rose petals (optional)

¼ tsp black pepper/sabut kali mirch, if you prefer you can increase the amount to ½ tsp

½ tsp saffron strands/kesar, check notes if you plan to skip saffron

5 tbsp organic cane sugar or regular sugar, you can also add as required

1 tsp aniseeds/fennel seeds/saunf (optional)

½ cup pumpkin seeds or melon seeds/magaz (optional) – check notes if not adding pumpkin seeds

¼ tsp turmeric powder/haldi for additional yellow color (optional), check notes if you want to skip saffron and just add turmeric powder

Direction:

Heat a pan and add all the dry fruits – almonds, pistachios, cashews, pumpkin seeds/melon seeds. Dry roast for 3 to 4 minutes on a low flame. Remove and keep aside in a plate or tray. use fresh nuts and not the ones whose shelf life has expired. In the same pan, add the saffron strands. 

Stir for more than half a minute, till the color of the saffron changes to a darker shade. remove and keep aside. Grate the nutmeg and keep aside. Once the dry fruits cool down, then add everything in a dry grinder jar, including rose petals, fennel, black pepper, turmeric powder, cardamom seeds, and sugar. If you have a small dry grinder jar, then you will have to grind in batches. Grind to a fine powder.

Remove the masala milk powder and keep in an airtight container or jar. store in the fridge, as the nuts may get rancid. The recipe yields a medium jar of milk powder. To serve, dissolve 2 to 3 teaspoons of the milk powder in a glass of hot milk, add sugar as required. Stir and serve masala milk.

Vanilla – Cinnamon- Almond Milk

Almond milk is yet another variation that you can try this monsoon. This beverage will keep calling you back for more. This almond milk with dates, cinnamon, and sea salt can be a refreshing hot drink during the monsoon for someone who has an intolerance to lactose. 

Recipe:

Ingredients

1 cup raw almonds, soaked

3 1/2 cups filtered water

2 to 4 pitted Medjool dates,* to taste

1 whole vanilla bean, chopped or 1/2 tsp vanilla extract

1/4 teaspoon cinnamon

Small pinch of fine sea salt

Directions

Place almonds in a bowl and pour some water. Soak the almonds in water overnight (about 8-10 hours). For a quick soak method, soak the almonds in boiled water for 1 hour. Rinse and drain well. Place drained almonds into a blender along with the filtered water, pitted dates, and vanilla beans. Blend on the highest speed for 1 minute. Place a nut milk bag into a large bowl and slowly pour the milk into the bag. Gently squeeze the bottom of the bag to release the milk. This process can take a few minutes. Rinse out blender and pour the milk back in. Whisk in the cinnamon and sea salt.

Using a funnel, pour into a large glass jar and secure lid. Refrigerate for up to 3 to 4 days. Shake the jar very well before drinking, as the mixture separates when sitting.

A Virtual Affair…

It’s always great to MEET, GREET, and HUG all your dear ones during the annual meet-ups. But now that times are different we can keep those hugs and kisses for later. Celebrating a virtual birthday may sound uninteresting and dreary, but you can make it a hit with some innovative ways. Here is what I did on Pahi’s 8th. The birthday girl was happy, and so were the Lil ones. 

  1. Theme- Decide on the theme of the birthday and start working on it. Start buying decoration stuff or DIY-ing it in advance.
  • Gifts – Know what your kids like and buy gifts accordingly. You can even inform your close family members about the birthday girl/boy choice of gift and ask them to order in advance to avoid the last-minute rush. 

  • Invites- Prepare the invites in advance. There are a lot of apps for making birthday invites. I used Canva, it has some cool templates. 
  • Building the momentum- I created a WhatsApp group with all those I wanted to invite, this made things a little simpler. To keep the group alive and build the momentum for the upcoming party you can keep posting throwback memories of the kids in the group. So, go through your album of all the previous years’ birthdays parties, search for pictures and videos, and keep the group alive till the party to generate curiosity. 
  1. Selecting a channel-GMeet, Zoom, MSTeams- choose what suits you and others. You can discuss this in the group with the mothers and plan accordingly.
  1. Virtual Surprises- Now that you are celebrating a virtual birthday, why not plan for a virtual treat. Ask the birthday girl/boy’s friends to send in their birthday wishes in video format. Collate all the videos together and prepare a video collage. Please inform their friends in advance. You can play this video at the party. It can be a good surprise for all and a keepsake for the birthday girl/boy. We also made a photo collage of her friends wishing her on her special day. 
  1. Plan the day- Now that we are all stuck at home, I thought of making her day a little more eventful. I planned a mini treasure hunt for the birthday girl early in the morning. She was soo excited to find all her gifts one by one. You may also write a riddle on each of the wrapped gifts and ask them to guess what’s inside the package. These small things are a great way to keep the Lil ones excited. 
  1. Bake a cake together- Involve your child and bake a cake together. They are always excited to bake, trust me. DIY a cake topper and surprise them during the party.
  1. Party Games- Decide on a few games which you can play on zoom or meet. There are a lot of them which you can refer to online.
  1. Virtual Party- Now comes the final event of the day, the virtual party. Please keep separate parties on zoom/meet- one with their friends and others with family members. Never mix both. Play games, show them the surprise video, photo collage, cut cake, let them dance, and make merry.

Click lots of pictures, make boomerangs, go crazy. This can be one of a kind of birthday party. Trust me!

LOCKDOWN Solace

What have we gotten yourselves into?

Never did I imagine even in my wildest dream that something like this would hit us so badly. Well, I did have a blurred vision that something bad would cripple mankind (owing to all the theories floating in the web of course) in the future but never expected this to witness it myself. It has been almost 6 months that I haven’t stepped out of the house. Yes, seriously, not even for a drive, forget about going for shopping or a walk.

The first few days of the lockdown were bliss; sleeping late, waking up late, cooking delicacies, from jalebis to caramel popcorn to God knows what! But now, I am done. I don’t know why, but I had this in mind that this pandemic will not last for this long and there would be a vaccine available soon. But, I was wrong. Finally, I had to come up with things that would help me keep SANE and occupied throughout the day.

Here are a few things which are helping me keep my cool. Read on.

Cooking Time: 20mins
Ingredients:
1 sweet red bell pepper
1 medium carrot
2 large broccoli florets, with stalk
4 celery sticks
French dressing (without oil) makes 3 Tbsp:
2 Tbsp lemon juice
2 Tbsp white wine vinegar
¼ Tbsp salt
¼ Tbsp sugar
¼ Tbsp mild mustard
Freshly-ground black pepper to taste
Method:
De-seed the pepper and cut into 1 cm squares. Peel and grate the carrot. Slice across the broccoli stems so you get chopped tops and thinly-sliced stalks. Peel the outer layers and chop the celery finely. Mix all together, add your favorite French dressing and mix again. Leave in the fridge for about ½ an hour before serving on a bed of finely-shredded lettuce.
For French dressing: Put it all in a screw-top jar and shake well. Keep it in the fridge and shake before serving.

Cooking Time: 25 mines
Ingredients:
1 tablespoon extra-virgin olive oil
½ cup chopped onion
½ cup chopped green bell pepper
1 teaspoon minced fresh garlic
1 pound peeled and deveined large shrimp
2 cups uncooked instant rice
½ cup water
1 ½ teaspoons chopped fresh oregano
¼ teaspoon salt
¼ teaspoon saffron threads, crushed
¼ teaspoon paprika
¼ teaspoon freshly ground black pepper
1 (14-ounce) can fat-free, lower-sodium chicken broth
1 cup frozen green peas\
2 ½ tablespoons fresh lemon juice
Method:
Heat a large Dutch oven over medium-high heat. Add oil to pan; swirl to coat. Add onion and bell pepper; sauté 3 minutes or until vegetables are tender, stirring frequently. Add garlic; cook 30 seconds, stirring constantly. Add shrimp to pan; cook 30 seconds, stirring frequently. Add rice and next 7 ingredients (through broth). Bring rice mixture to a boil; cover pan. Reduce heat, and simmer 5 minutes or until rice is done. Remove from heat; stir in peas and lemon juice.

1 cup grated beetroot
½ packet firm tofu
½ Tbsp garlic paste

¼ cup chopped cashew nuts, to stuff
½ cup crushed oats, to coat
Oil, to pan fry
Method
Take a bowl and put the grated beetroot, the tofu followed by garlic, amchoor, chaat masala, rock salt and anardana. Mince with your hands & make round patties and insert the chopped cashews as a filling. Make round kebabs. Coat the patties with crushed oat powder. In a flat pan heat the oil and lightly fry these. Served with a dollop of green chutney.

Grilled Sardines

Ingredients:
8 sardines (medium, more if small)
Fresh thyme
Fresh savory
4 Tbsp olive oil
2 garlic cloves
Salt and pepper
Method:
Grate the garlic cloves with a microplane to have it very fine. In a bowl, mix the garlic with the oil, salt and pepper, and the herbs finely chopped. Coat the sardines with this sauce and place in the fridge, covered, for 1 hour. When ready to eat, heat a grill. Cook the sardines on each side for 3 to 4 min only, according to size. Brush with the sauce while cooking. Adjust the seasoning.
Serve the grilled sardines with a marinated fennel and radish salad — with olive oil, salt and pepper, and a squeeze of lemon juice — and plain Jasmine rice.

Blueberry Muffins

Cooking Time: 30 mins
Ingredients:
All purpose flour/ maida – 1 & ½ cup minus 3 tblsp
Blueberries – 1 cup
Corn flour – 3 tbslp
Plain yogurt/ curd – 1 cup
Oil – ½ cup
Sugar – ¾ cup
Baking powder – 1 tsp
Baking soda – ½ tsp
Vanilla essence – 1 tsp
Method:
Pre heat oven to 180 o C. Sieve maida with corn flour twice to ensure even mixing. Mix curd and sugar in a bowl well. Add the baking powder and baking soda and let it rest for 2 – 3 minutes. You can see the mixture now to be slightly frothy. Now mix oil and vanilla well to it. Add the flour one tablespoon at a time and mix well. Wash the blueberries; pat dry it using kitchen towel/ tissue. Dust it with 1 or 2 tsp of flour (maida) and add it to the mixed batter and mix evenly. Line the muffin tray with liners and spoon 3/4th of the liner with the batter. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool over a wire rack. Yummy muffins with a slight hint of tangy blue berries here and there are ready to enjoy!

Black Bean Chilli

Ingredients
1 tablespoon olive oil
1 onion chopped
2 red bell pepper
Seeded and chopped 1 jalapeno pepper

Quartered 6 plum tomatoes
Diced 1 cup fresh corn kernels
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 tablespoon chili powder
2 (15 ounce) cans black beans
Drained and rinsed 1 ½ cups chicken broth or vegetable broth
1 teaspoon salt
Method:
Heat oil in a large saucepan over medium to high heat. Sauté the onion, red bell peppers, jalapeno, mushrooms, tomatoes and corn for 10 minutes or until the onions are translucent. Season with black pepper, cumin, and chili powder. Stir in the black beans, chicken or vegetable broth, and salt. Bring to a boil. Reduce heat to medium low. Remove 1 ½ cups of the soup to food processor or blender; puree and stir the bean mixture back into the soup. Serve hot by itself or over rice.

½ cup quinoa

Place quinoa in water and rinse well. Drain quinoa, then stir in 1 cup cold water, ½ teaspoon cinnamon and 1 teaspoon butter. Microwave on high for 4 minutes. Stir and microwave 3 more minutes. Remove from microwave, cover with foil and sit 2 minutes. Fluff quinoa and stir in remaining butter. Divide between 2 bowls and top with milk, maple syrup, banana slices and cinnamon to taste.

Pumpkin Pie Pudding

Cooking time: 20 mins
Ingredients
one 16oz container Organic Firm Tofu, drained
495g (2 cups) 100% Pure Pumpkin Puree, canned
¼ cup Unsweetened Vanilla Almond Milk
32g (2 tbs) Roasted Almond Butter
2 tsp English Toffee-Flavored Stevia Extract
2 tsp Maple Flavor
2 tsp Ground Cinnamon
½-1 tsp Pumpkin Pie Spice (to taste)
¼ tsp Salt

Method:
After draining your tofu, press the block between paper towels to remove as much water as possible (mine weighed 405g after pressing). Dump the tofu into a high-speed blender. Add the rest of the ingredients to the blender and puree until completely smooth and even.
Scoop into serving bowls, cover and refrigerate overnight. Serve!

Almond Milk

Its tasty, its better and its super easy to prepare. Go make it and make her happy.
Ingredients:
1 cup raw almonds, soaked
3 1/2 cups filtered water
2 to 4 pitted Medjool dates*, to taste
1 whole vanilla bean, chopped or 1/2 tsp vanilla extract
1/4 teaspoon cinnamon
Small pinch of fine sea salt
Method:

Place almonds in a bowl and cover with a couple inches of water. Soak the almonds in water overnight (about 8-10 hours). For a quick soak method, soak the almonds in boiled water for 1 hour. Rinse and drain well.Place drained almonds into a blender along with the filtered water, pitted dates, and chopped vanilla bean.Blend on the highest speed for 1 minute. Place a nut milk bag over a large bowl and slowly pour the almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk. This process can take a few minutes so be patient! Rinse out blender and pour the milk back in. Whisk in the cinnamon and sea salt. Using a funnel, pour into a large glass jar and secure lid. Store in the fridge for up to 3 to 4 days. I recommend storing in the coldest spot in the fridge (typically the back) rather than on a door. Shake the jar very well before drinking as the mixture separates when sitting.
Tips: *If your dates or vanilla bean are dry/stiff, soak in boiling water for 30 minutes before use. Drain well. You can also use another sweetener of your choice like maple syrup instead of the pitted dates.

9 Myths Which I Busted During This Lockdown

1. Can’t WORKOUT at home

The first thing to top the list has to be this. Before the lockdown, I never thought I would ever borrow my little girl’s pink yoga mat and do those donkey kicks or deep sumo squats on it. For me working out from home was a strict ‘no-no’. I loved going to the gym be it rain, sun, or wind; there was no stopping. But now the scenario has changed. I sulked for a few days at the start of the lockdown. Finding excuses- not enough time, not enough space, no gears, and this and that, and God knows what. I didn’t work out and was always grumpy. But then I had to come to terms with my stupid emotions; I accepted the situation and I am at peace now. 1 hour of home workout and those endorphins work like morphine for me.
Yes, trust me!

2. Stay-At-Home means follow NO ROUTINE

Before the lockdown the weekends were crazy. Getting up late, then breakfast late, lunch super-late, evening tea super duper late, and then everything went haywire. The initial days of the lockdown were quite similar. There wasn’t any routine. We were just pretending every day to be Saturday and Sunday and then on top of that there wasn’t any house help, so some extra to-do activities. It was insane. Following a routine might sound a bit boring and stifling for some, but believe me, it is the path to productivity and happiness. Don’t believe me? Ummmm

3. WORK FROM HOME IS NOT POSSIBLE

There is no denying the fact that almost 2/3rd of the world population is busy with WFH mode. Companies are adopting their best possible means to make work from home possible for their employees. So, WFH is not that difficult, or is it? Looking at the current situation we should adopt this new emerging trend. Right?

4. WE CAN’T COOK FANCY meals at home

Social media these days are filled with pictures of people posting fancy meal pictures. From jalebis to biryanis, people are certainly getting better with their culinary skills. Well, I just might be the best example. How? Well, I can now cook pulao, egg fried rice, biryani, jalebi, and chili chicken without watching the recipes on youtube 😀 So yes, in case you are in a mood for some fancy food pictures for your Insta then you better enter the kitchen and cook up a storm and surprise everyone. 5. CAN’T RUN MARATHON at home

Yes, this happened a few days back. The man of the house is the one to be appreciated. He started running in the house along with the daughter crazily to complete a mini 20 km marathon and he did it. It looked a bit awkward at first, running from one room to the other, but believe me, this kept them occupied over the weekend. They were busy running, while I calmly was busy running the daily errands

6. Can’t HOMESCHOOL KIDS

Let us admit it, this stupid virus is going to stay around us for quite a few days. Before the lockdown, I always wished for more study-time with my daughter. Now that she is at home, I am a changed mother. Teaching a 7-year-old should not be rocket science, right? Those simple addition, subtraction, multiplication, and divisions will keep them busy until you are done with your work. But then this isn’t a smooth ride after all and I have realized it. There are days when everything is fine and then there are also days where you end up acting like a nasty mother. I am not saying Homeschooling is impossible, I am saying it’s difficult and requires a lot of planning. I am still learning this art and I believe having a proper routine, talking to fellow mommies, creating lesson plans, and strategies it what we should do to keep the young minds at their best.
Am I sounding too preachy? No, right?

7. We CAN’T LIVE without salons and PARLOURS

Humans are capable of doing anything, anytime. Now that we have realized we can’t even go out to buy our groceries, visiting a salon is out of the question. A quick chat with a dear friend yesterday made me realize that it is better to make the razor your best friend now and also invest a little time trying out your mommy’s beauty rituals for the time being. We have survived the last 65 days without the parlor and I am sure we can live without them for now.
Okay, let’s say till the time we get a vaccine for this stupid virus.

8. No MAID, no COOKING

There were days when the maid took a day off, we announced the kitchen to be closed for the day. But, sadly everything has changed now. There is never a day off now. These two months have made me an expert in managing cooking, cleaning, laundry, dusting, and a hell lot of other stuff. The feeling after doing these endless thankless jobs when I sit and look around sipping my tea, always make me realize, wow I am soo good at all these as well.
But then who cares!

9. RETAIL THERAPY means spending lavishly on swanky clothes and jewelry

This used to be my savior. On days I was feeling blue I would always window shop, well on my phone. Amazon, Myntra, Shein, Hopscotch, TataCliq, and gazillion of the apps installed on my phone. After the lockdown, I was shattered. Yes, shopping (window shopping) always worked for me, even if I buy a small earring. Well, I could have still window shopped but then the words in bold red – Currently Not Delivering In Your Area always took the fun away. Then I started widening my horizon and satiated my feelings by shopping on SuperDaily, Amazon, Fresh, Amazon Pantry, Flipkart, and the damn Licious. I started finding solace in the good imagery of the food items. Well, that is the irony of my life for now.

Eating this dish from Meghalaya takes lots of guts. The strong smell is sure to make you say “NO” to this dish in case you haven’t eaten it before. But as per the taste is concerned anybody who has tasted this can swear by it. This dish is prepared by boiling pork with herbs along with a handful of rice and other spices as well as fermented soy beans which make it smelly. The color of the dish is dark green or almost black when ready to serve. You need to develop a taste to eat this. Shutki Maach or dried fish is a common in many Bengali houses. Vendaloo is basically prepared with pork, chicken, beef, mutton, lamb or duck meat where the meat is first marinated in vinegar and garlic and then cooked along with a variety of spices. It is said that the older the vindaloo the better it tastes. People basically prepare and keep this in the refrigerator and consume it as a pickle. This hot, fiery and pungent dish is a must try for sure.

Chutney is always welcomed in an Indian meal as we don’t mind adding a twist to our plate with a dash of spice and sour taste. But wait, how about chutney made up of red ants and their eggs? This hot and pungent chutney, Chaprah is a dish from Chhattisgarh and people there love this like any other dish. The tribe there dries those ants and their eggs and then mixes them with a variety of spices to prepare the chutney. It’s pungent and sour and can either make your happy or fiery. So, try it at your own discretion.

Nakham is another dish from Meghalaya which the Garo tribe people love to gorge on. Nakham is prepared with dried fish, vegetable and distilled ashes. This dish has got a very strong smell which might be offensive to others but to some it is a much relished delicacy.

Khorisa is another delicacy which is consumed basically in Assam. It is nothing but fermented bamboo shoot which is cooked with vegetables, chicken or pork and adds a certain texture to the dish. This is slightly pungent and certainly isn’t for the faint hearted.

Bhedai Lata or better known as skunk vine in English is found extensively in northeast India and it is basically consumed for its medicinal values. This creeper has got a very strong pungent smell which might not be liked by many but this still remains their favorite as this is said to cure stomach ailments. Mumbai local train is called as Mumbai’s lifeline, but the auto’s and taxi’s which ferries its passengers from their home to the nearest railway stations cannot be sidelined. They are as important as the local train. They are on duty right before you sip your morning cup of tea and carry you halfway to your workplace till wee hours of the night to drop you home safely from the railway station.

The importance of autos cannot be ignored by any Mumbaikar, right? But somehow I feel the equation Mumbaikars share with most of the auto wallas is not good. The aggression, the bashing continues from time to time. I keep wondering why? I too have had my share of disagreement with a few of the auto wallas when they had refused to travel to places which are too close and at times I felt their meter is tampered. These incidences keep happening and I think will continue to happen. But after I met this man called Santosh Gaikwad, my outlook has changed a little towards them. This autowalla bhaiya was making a difference and helping people with whatever small ways he can.

I got to chance to speak to him in our society while he was dropping a passenger. You will find this man in Navi Mumbai and can recognize him with his auto which is decked up with flowers and bright lights. The moment you enter his auto you will be amazed to see how he has customized his vehicle with newspaper, magazines, pamphlets to keep enlighten you while he drives you safely to your destination.Untitled design

The best part is not only the literary collection that he has but giving free rides to physically handicapped people. Yes, you read it right, this man gives free rides to the differently –abled. His grandmother was diagnosed with cancer and one of her leg got amputated, he saw the difficulties faced by her and decided to help those people to ease their pain a little. His philanthropic work got recognized and was included in the Limca Book Of World Records in the 2014 edition. Isn’t it awesome?

Santosh Gaikwad is a very simple man, who inspite of being not so financially sound is doing his bit to help those who need support. I think he is doing a great job and we all should come forward and support him. He also told me that now a few of his fellow autowalla friends are also doing the same.

Not only this he told me that he also supports social causes like Education For Every Girl Child by giving information to socially backward classes. Awareness about road safety measures is another issue which is being addressed by this Good Samaritan.
